Cisternino
After lunch on Wednesday 25th May we were driven over to Cisternino to have a look around the organic olive oil farm "Il Frantolio D'Amico Peter". Set in the heart of Valle D'Itria, among the trulli, on a hill about 397 metres above sea level. The farm has been operating since 1917 and today its 5th generation of farmers own and run the business. Owned by D'Amico Pietro (in conjunction with his sons Antonello and Vitamaria), who took over the management of the farm from his father D'Amico Antonio. The farm is entirely organic, and covers an area of about 50 hectares, mostly cultivated with olive groves, including about 6,000 olive trees. The primary and most valuable product of the company is the extra virgin olive oil "Trisole". Our guide explained that the olives are harvested between mid-October through till December. The Olive tree at the entrance to the farm we were told was over a thousand years old, though the majority on the farm today are between three to four hundred years old. Fron picking to bottling takes twelve months and they produce 80,000 litres of olive oil a year.
